  • 1/3 Cup Almond Butter (or any nut butter)
  • 2 Tablespoons Honey (or maple syrup)
  • 2 Teaspoons Pumpkin Spice
  • 1 Cup Dark Chocolate Chips
  • 1 Tablespoon Coconut Oil

Instructions

  1. Prepare a silicone muffin tray by lining it with cupcake liners if desired.
  2. In a mixing bowl, combine pumpkin puree, almond butter, honey, and pumpkin spice until smooth.
  3. In a microwave-safe bowl, mix chocolate chips and coconut oil; melt in 30-second intervals until smooth.
  4. Spoon melted chocolate into each muffin cup, tilting to coat sides evenly; freeze for 10 minutes.
  5. Add about one tablespoon of pumpkin filling to each cup and top with more melted chocolate; freeze for an additional 20 minutes.
  6. Once set, carefully remove from the tray and enjoy!
