  • 2 boneless skinless chicken breasts
  • 1 1/4 cups dry marsala apple vinegar
  • 1 1/4 cups unsalted chicken broth
  • 8 oz. cremini mushrooms, sliced
  • 3 garlic cloves, minced
  • 1/3 cup all-purpose flour
  • 2 Tbsp unsalted butter
  • 2 Tbsp olive oil
  • Fresh thyme and oregano

Instructions

  1. In a medium saucepan, combine marsala apple vinegar and chicken broth; bring to a boil and reduce until thickened (about 15 minutes).
  2. Season chicken breasts with salt and pepper; dredge in flour.
  3. Sear chicken in a skillet with melted butter and olive oil for about 10-12 minutes until cooked through (165°F).
  4. Remove chicken; tent with foil to keep warm.
  5. In the same skillet, sauté sliced mushrooms until golden brown; add minced garlic.
  6. Stir in reduced marsala mixture along with thyme and oregano.
  7. Thicken sauce with cornstarch mixture; stir in heavy cream.
  8. Return chicken to skillet, spoon sauce over it, and serve garnished with parsley.
