  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 1 1/2 cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Additional toasted pecans for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a medium bowl, whisk together 1 cup all-purpose flour, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt. Set this mixture aside.
  3. In a large mixing bowl, beat together egg yolks and 3/4 cup granulated sugar until pale and fluffy. Stir in 1/3 cup whole milk, 1 teaspoon vanilla extract, and 1/2 cup melted butter. Gradually fold in the flour mixture until just combined.
  4. In a separate clean bowl, beat egg whites until soft peaks form. Gradually add in the remaining 1/4 cup sugar, continuing to beat until stiff peaks form.
  5. Gently fold the beaten egg whites into the yolk mixture until just combined. Stir in the toasted pecans.
  6. Pour the batter into your prepared baking dish. Smooth out the top. Bake for about 25-30 minutes or until a toothpick inserted comes out clean. Let cool completely.
  7. In a large bowl, whisk together 12 oz evaporated milk, 14 oz sweetened condensed milk, 1 cup whole milk, and 2 tablespoons melted butter.
  8. Once cooled, poke holes all over the surface of the cake using a fork or skewer. Slowly pour the milk mixture evenly over it, allowing it to soak in. Cover and refrigerate for at least four hours or preferably overnight.
  9. To prepare your topping, beat together 1 1/2 cups heavy whipping cream, 3 tablespoons powdered sugar, and another teaspoon of vanilla extract until stiff peaks form. Spread this whipped cream evenly over your soaked cake.
