  • 1 lb Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning
  • Salt and pepper to taste

Instructions

  1. Pound chicken to an even thickness of about 1/4 inch and season with olive oil and blackened seasoning.
  2. Heat a skillet over medium-high heat, add olive oil, and cook chicken for 3–4 minutes per side until a dark amber color appears. Add butter and garlic during the last cooking phase.
  3. Remove chicken and let it rest before slicing.
  4. In the same skillet, melt remaining butter, sauté garlic, then stir in heavy cream and additional blackened seasoning; simmer until thickened.
  5. Cook pasta according to package instructions. Reserve some pasta water before draining.
  6. Combine cooked noodles with the alfredo sauce, adding parmesan cheese and reserved pasta water for consistency. Top with sliced chicken.
