  • 1 1/2 cups all-purpose flour
  • 1/2 cup black cocoa powder
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar (for cookie dough)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup light brown sugar, packed

Instructions

  1. Prepare the cream cheese filling by mixing cold cream cheese, granulated sugar, and vanilla until smooth. Chill while you make the cookie dough.
  2. Preheat your oven to 350°F (175°C). In a bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy. Add egg yolks and vanilla; mix well.
  3. In another bowl, combine flour, black cocoa powder, baking powder, and salt. Gradually mix dry ingredients into the wet ingredients until just combined.
  4. Scoop dough onto a lined baking sheet and create an indentation in each ball for the filling. Fill with about 1 teaspoon of chilled cheesecake mixture and cover with more dough.
  5. Bake for 10-12 minutes until edges are set but centers are slightly soft. Cool on baking sheets before transferring to wire racks.
