  • 1/4 cup granulated sugar
  • 1 large egg yolk, room temperature
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C) and line muffin pan with paper cups.
  2. Whisk together flour, pumpkin spice, baking soda, and salt in a medium bowl.
  3. In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil (or melted butter), and vanilla. Mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
