  • 2 chicken breasts
  • 5 small/medium potatoes
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder
  • Paprika
  • Ranch seasoning
  • Onion powder
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 1/2 cup BBQ sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Peel and cube the potatoes. Toss with olive oil, salt, pepper, garlic powder, and paprika.
  2. Cook seasoned potatoes in an air fryer at 400°F for 20-25 minutes.
  3. While the potatoes cook, cube the chicken. In a skillet with butter over medium-high heat, cook the chicken with seasonings until done.
  4. Stir in garlic and BBQ sauce with the cooked chicken.
  5. Combine cooked potatoes with the chicken mixture and top with mozzarella cheese.
  6. Broil briefly until cheese melts or cover on the stovetop.
