  • 6 scallions (thinly sliced, greens reserved)
  • 16 ounces frozen corn kernels (or 3 cups fresh)
  • 1 teaspoon Tajin seasoning
  • 4 ounces cream cheese
  • ¼ cup light sour cream
  • 7 ounces Cotija cheese (grated)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F.
  2. In a skillet, heat olive oil over medium heat and sauté scallions (reserve greens).
  3. Add corn and Tajin; cook until softened. Mix in cream cheese until melted.
  4. Remove from heat and stir in sour cream and Cotija cheese.
