  • 3 tbsp granulated white sugar
  • 1 ¾ cups all-purpose flour
  • 2 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 6 oz cream cheese
  • ¾ cup unsalted butter, softened
  • ¾ cup light brown sugar, packed
  • ¼ cup granulated white sugar
  • 2 egg yolks
  • 2 tsp vanilla
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¼ cup granulated white sugar for topping
  • ¼ tsp ground cinnamon for topping
  • ⅛ tsp ground nutmeg for topping
  • pinch ground allspice for topping
  • 12 tbsp salted butter, melted for topping

Instructions

  1. Prepare an apple cider reduction by boiling apple cider until thickened to about 2 tablespoons. Cool before using.
  2. Mix cold cream cheese with granulated sugar until smooth; set aside.
  3. Cream softened butter, light brown sugar, and granulated sugar in a large bowl. Add egg yolks and vanilla.
  4. Combine dry ingredients (flour, cinnamon, nutmeg) separately; gradually mix into wet ingredients until combined.
  5. Preheat oven to 350°F (175°C). Scoop cookie dough onto baking sheets, create indentations, fill with cheesecake mixture, and cover if desired.
  6. Bake for about 11 minutes until lightly golden at the edges. Cool on racks before serving.
